 Since 1973, when David and Peter Truitt took over a cannery in Salem, Oregon, Truitt Bros. has been more than just a food processor. We represent the third generation of a food processing family.
Located in the Willamette Valley, the premier growing region of the United States, we understand what fresh good food is all about. We pretty much have to - we're surrounded by it and purchase most of the products we process from the area. Our product lines include entrees, side dishes, bases and desserts.
Being a smaller company is our advantage. We're not so big we'll ignore smaller requests, yet we're a leader in the shelf stable food processing business - because this is all we do. And we're good at it!
We take special pride in running a successful family-owned-and-operated business, and get no greater satisfaction than knowing we're helping our partners succeed in their endeavors.

Nick’s authentic Italian Sausage is a pure pork product, made the “old world” way; lean and coarse ground. Our mild Italian is seasoned with whole fennel, black and white pepper and our hot Italian is seasoned with whole fennel, crushed red pepper and cayenne powder.

Chorizo is a Mexican sausage seasoned with cayenne red pepper, garlic, white pepper, nutmeg and paprika. Zesty Chorizo lends a taste of old Mexico to your chili, burritos, or quesadilla. Also great with eggs or on the grill. Chorizo is available in links or bulk as;

CAJUN PRODUCTS
Andouille is a Cajun sausage that is seasoned with red pepper, sage, bay leaves, ginger, cinnamon, black pepper, white pepper and thyme. Use Andouille in gumbo, jambalaya, Creole dishes, or red beans and rice. Nick’s Andouille sausage is available in:
